Zesty Pumpkin Spice Granola
The basic principles of the recipe are simple, and the flavorings can be made to suit your taste! Mix it up by adding in other fruits or ingredients you have in your pantry.
Ingredients:
3 cups oats
1 cup nuts of choice (I used slivered almonds)
1 cup pumpkin seeds
1 cup shredded coconut
1/2 cup maple syrup (agave or honey is great too!)
1/4 cup coconut oil (or oil of choice; I would avoid Olive oil as the flavor may be too strong)
3/4 tsp salt
1 cup dried fruit of choice (craisins used here, but think apricots, raisins, cherries, mango, anything!)
1 tbsp of dried spices (pumpkin spice mix, cinnamon, turmeric, anything to your taste)
Directions:
Preheat your oven to 250 degrees.
Mix all together until combined. Spread over two sheet pans in a single layer. Put in oven and stir every 20 minutes or so, for 1 hour or until the granola is dried and crispy. If you want, you can leave the granola in the oven overnight to let it get extra crunchy. Store in an airtight container in the cupboard or fridge.
Enjoy with yogurt, fruit, as a topping for a crumble or just a handful on it’s own!
