5 Ingredient Butternut Squash Soup
The easiest Butternut Squash soup ever! Only 5 ingredients and minimal time and prep. Did you know that butternut squash is rich in nutrients and low in calories? A great source of Vitamin A, as well as Vitamin C and Vitamin E, makes a bowl of this soup not only nourishing but healthy too!
Ingredients:
2 cups butternut squash, cubed
1/2 half an onion, diced
2 cloves garlic, minced (or more if you prefer)
2 cups Vegetable Stock - choose low sodium or make your own using vegetable scraps

Method:
Sautee onions in olive oil until translucent. Add the garlic and continue sautéing until they are soft.
Add in the cubes of butternut squash and stir to combine.
Add the broth, bring to a boil, and then let simmer until the butternut squash is tender about 20 minutes.
Using a blender or immersion blender, puree the soup to your desired consistency.
Serve in a bowl and add your toppings. Enjoy!
