Summertime Charcuterie

Summer is officially here, which means more parties, more friends and family, and more food. It is also a season of slowing down and enjoying the little things. Routines get slower, and appetites change.

One of my favorite ways to enjoy all that summer offers is to create a big beautiful charcuterie board. Wondering what charcuterie is? It is basically a board or platter of meats, cheeses, nuts, fruits, and crackers or bread. Sounds sinful, right? It doesn’t have to be! Following a few simple rules can help you to create a balanced, healthy, and enjoyable meal to share with friends a family.

Keep it balanced.

I always aim for 50% protein, 25% nuts, fruits, and vegetables, and 25% carbs (cracker’s, bread, pita, anything!) Try choosing an option with a higher fiber content to help you feel more satisfied and to give you more nutrients.

Use what you have.

Anything can make an excellent charcuterie! Use what is seasonal, local, and what you have on hand. Summertime produce is plentiful, and you can choose from tomatoes, cucumbers, peppers, cherries, nectarines, and peaches.

If you can, choose quality, not quantity.

Most deli-style meats are highly processed, so if you are able, try and choose organic and nitrate free. By choosing an option that is focused on quality over quantity, you increase your enjoyment and decrease your caloric intake. Remember, everything in moderation is key.

Choose different textured cheeses.

Cheese can be hard, soft, medium, runny, crumbly, and everything in between! Try choosing a few different kinds, like brie, cheddar, and parmesan, to have different textures and flavors. Again, if you are able, try and choose quality over quantity. 

Vegetables and fruits.

When you think vegetables for a charcuterie, try to think beyond just carrot sticks. Fermented vegetables, pickled vegetables, and even grilled vegetables can be a great addition and pack additional health benefits and flavor profiles. Try adding a hummus for your veggies, like this one! And don’t forget to add fruits to your boards for that salty-sweet flavor. Try fresh fruits, dried fruits, and even preserved fruits like figs in smaller amounts due to their sugar content.

Keep it sanitary.

During these times, it may be uncomfortable for some to share a plate of food with others. Provide toothpicks, plates, napkins, and other reusable cutlery for your guests to ensure their safety and comfort. Encourage hand washing, and keep hand sanitizer handy. Remember to respect other’s opinions and to be kind.

Most of all, enjoy it! A charcuterie is meant to be eaten slowly; experience all the different flavor combinations and textures.
